Mexian Coffee 1:

1 oz Kahlua® coffee liqueur

5 oz hot black coffee

1 1/2 oz whipped cream

1 tsp sugar

Pour coffee and kahlua into an irish coffee cup, and sweeten to taste. Gently float the cream on top, and sprinkle with grated chocolate.

Mexican Coffee 2:

Ingredients: 6cups water

1/2cup ground dark roast coffee

2cinnamon sticks

1cup half-and-half

1/3cup chocolate syrup

1/4cup packed dark brown sugar

1teaspoon vanilla

1cup whipping cream

1/4cup powdered sugar

1/2teaspoon vanilla

Ground cinnamon

Preparation: 1.Place water in drip coffee maker. Place coffee and cinnamon sticks in coffee filter. Combine half-and-half, chocolate syrup, brown sugar and vanilla in coffee pot. Place coffee pot with cream mixture in coffee maker. Brew coffee; coffee will drip into chocolate cream mixture.

2.Meanwhile, place whipping cream into medium bowl; beat with electric mixer at high speed until soft peaks form. Add powdered sugar and vanilla; beat until stiff peaks form. Pour coffee into individual coffee cups; top with dollop of whipped cream. Sprinkle with ground cinnamon.

Mexican Coffee 3:

4 scoops of ground coffee beans, Columbian or other variety - a coffee scoop is equivalent to a rounded tablespoon

1 scoop (rounded tablespoon) cocoa powder

1/2 teaspoon ground cinnamon - eyeball it, plus a sprinkle for garnish

4 jiggers (1 ounce shots) coffee liqueur (recommended: Kahlua)

1 canister whipped cream with spray top

Directions

Place coffee, cocoa and cinnamon in a filter for coffee brewing. Make 4 cups of brewed mocha-cinnamon coffee. Pour a shot of coffee liquor in the bottom of a coffee mug. Pour in a serving of brewed mocha-cinnamon Mexican coffee. Top off the mug with a generous swirl of whipped cream and garnish with another sprinkle of cinnamon. Repeat for desired number of mugfuls!
