Mat-oppskrifter uten melk og gluten? HJELP!

Jeg har nettop fått vite at jeg har melke- og gluten allergi. I tilleg har jeg noe som heter kryssallergi. Og jeg sliter veldig med å finne retter som jeg kan spise! Greit at dagligvare butikkene blir bedre og bedre på hyller med slike produkter men det er vanskelig å sette sammen hele måltider uten nooooe av det jeg IKKE tåler, for der begynner å bli en del ting jeg ikke kan spise... Så er det noen der ute som har noen oppskrifter på lur?

Gluten Free/Dairy Free Banana Bread Pancakes

2 cups gluten free flour mix (¾ cup buckwheat, ½ sorghum flour, ¾ c millet flour)

1 tsp xanthan gum

2 Tbsp brown sugar

2 tsp baking powder

1/2 teaspoon Baking Soda

1/2 tsp sea salt

1/2 tsp cinnamon

2 cups dairy free "buttermilk" (2 cups unsweetened rice milk plus 4 to 5 teaspoons apple apple cider vinegar - let sit for a few minutes)

3 Tbsp canola oil

1 egg, beaten

1/2 tsp vanilla (McCormick's is gluten free)

3 ripe bananas, mashed

1/2 cup walnuts, chopped (for garnish)

1 banana, sliced (for garnish)

Preheat a greased skillet to medium heat. Meanwhile, combine all of the dry ingredients in a large bowl and mix together. In a separate bowl, add the egg and whisk until beaten. Add the oil, buttermilk, vanilla, and mix together. Create a well in the center of the large bowl and add the wet ingredients into the dry ingredients. Mix gently until combined. Fold in the mashed bananas. Batter will be lumpy.

Use a ladel or 1/4 cup measuring cup to portion out pancake batter onto skillet, flipping pancakes when bubbles appear on surface of pancake. Garnish pancakes with sliced bananas, chopped walnuts and plenty of gooey syrup!

Berry Good Banana Blueberry Muffins (Gluten and Dairy Free)

3/4 cup sorghum flour

1/2 cup millet flour

1/2 cup brown rice flour

2/3 cup sugar

1 tsp guar gum

2 tsp baking powder

1/4 tsp salt

1 tsp cinnamon

2 tbsp flaxseed meal

1 egg, beaten

1/2 cup Vanilla flavored Almond Milk

1/4 cup canola oil

1 banana, mashed

1/2 - 1 pint fresh berries (blueberries, blackberries, or raspberries)

Preheat oven to 400 degrees. Grease a 12-muffin tin or line with baking cups. In a large mixing bowl, combine dry ingredients. In a separate bowl, add the beaten egg, almond milk, and canola oil. Make a well in the center of the dry mixture and add wet ingredients, mixing just until the batter is moistened. Gently fold in fresh berries. Spoon batter into muffin cups until 2/3 full. Bake for 18-20 minutes or until slightly golden.

Egg Salad

4 hard boiled eggs

1/4 cup Hellman's Real Mayonnaise

1/4 cup chopped celery

1 tsp French's yellow mustard

Sea salt to taste

Pepper to taste

Chopped parsley for garnish

Remove the shells from the 4 hard boiled eggs. Chop eggs and set aside.

In a medium bowl, mix together mayonnaise and mustard. Add chopped

celery and mix well. Gently add chopped eggs and season with salt and

pepper to taste. Sprinkle with chopped parsley as garnish.

I like to enjoy this salad with a few leaves of spinach on a toasted "Food for Life" gluten free brown rice english muffin.

Lemony Gluten and Dairy Free Chicken Salad

1 lb chicken, cooked and diced

1/4 cup celery, chopped

1/4 cup red delicious apple, chopped

1/4 cup golden raisins

1/4 cup toasted walnuts, chopped

2 heaping tablespoons Hellman's Real Mayonnaise

juice of 1/2 lemon (2 tsp)

1/4 tsp paprika

salt and pepper to taste

Mix all ingredients together and refrigerate until chilled. Spoon onto crusty gluten free french bread (Deerfield's Gluten Free baguette is my favorite) and garnish with fresh lettuce and tomato.

Ellers kan du spise akkurat som før, bare lag mer mat selv. Melken bytter du med soyamelk eller mandelmelk feks, og mel byttes med glutenfritt mel (jytte mel, glutenfri havre osv)

Der er erstattere for alt, så er bare å slappe av!
