Bagels-oppskrift!?

Jeg har fått så kick på bagels som lunsj og frokost. Men det blir dyrt og upraktisk å fly på 7-11 hele tiden.

Er det noen som har en (enkel) oppskrift?

Det er den oppskriften jeg bruker --- og de er bare nydelige...

(Nå vet jeg ikke hva Bagelsene på 7-eleven koster - men jeg vet at på Smart Club koster de omtrent halvparten av det de koster på Meny ... - og du kan kjøpe dem frossne og halvstekte -- og bare ta dem litt i risteren før du spiser... Nyydelig....)

Hmm... ingen bagels jeg har prøvd her til lands kan måle seg med den "ekte" i USA... hvorfor er våre så anderledes? De smaker jo bare brød?

Amount Measure Ingredient -- Preparation Method

4 1/2 To 5 cups all-purpose flour

3 tb Bs sugar

1 tb Bs salt

2 Active yeast

2 tb Bs margarine

1 tb Bs sugar

1 Egg white

Water

Mix 1 1/2 cups flour, 3 Tbs sugar, 1 Tbs salt and

yeast.

Heat 1 1/2 cups water and margarine to 120-130

degrees. Add to dry ingredients; beat 2 minutes at

medium speed. Add 1/2 cup flour; beat at high speed 2

minutes. Stir in more flour to make a stiff dough. On

floured board, knead 8-10 minutes. Set in greased

bowl; turn to grease top. Cover; let rise in warm,

draft-free place 1 hour.

Punch dough down. Cover; let rest 15 minutes. In a

large skillet heat 1-inch water over medium low heat

to a simmer; add remaining sugar and salt.

Divide dough into 12 pieces; shape 3 pieces into

smooth balls. With floured finger, poke a 1-inch hole

in each. Drop bagels into simmering water. Cook 3

minutes. Turn and cook 2 minutes. Turn again; cook 1

minute more. Drain on towels. Repeat shaping and

cooking rest of dough.

Place on greased baking sheet. Mix egg white and 1

Tbs water; brush on bagels. Sprinkle with coarse

salt, sesame, caraway or poppy seed if desired. Bake

at 375 degrees for 20-25 minutes. Remove from sheets.

Cool.

BAGELS SESAME GARLIC OR PLAIN

2 ts Yeast

2 tb Honey

1 1/2 c Warm water

1 c Hard whole wheat flour

Mix together and let sit

-until bubbly

2 1/4 c Hard whole wheat flour

1/2 ts Salt

1 1/2 tb Oil

2 1/2 tb Sesame seeds

1/2 tb To 1 tb garlic powder (to

-taste)

sizeable bagels.

Eggless. A handsome bagel. Double the recipe if you

expect company - they'll disappear fast. Omit the

sesame and garlic for plain bagels.

Add remaining ingredients to sponge and knead dough

well.

Let dough rise in an oiled bowl that's covered until

double in size. Punch down and divide into 8 pieces.

Start a large pan of water boiling. Some say honey

helps the glaze. . . you may (opt) add 1/2 Tbs honey

to the water. Shape into round rolls, then push

thumbs through center and shape the hole.

Drop the bagels into boiling water right away after

shaping them. Leave for about a minute - they'll puff

up fast. Remove and put on oiled pan. Bake at 350 F

for 20-25 min or at 400F for 10-15 min, until lightly

browned.

NEW YORK-STYLE BAGELS

1 Potato, peeled and quartered

2 c Boiling water

1 Package active dry yeast

4 c All-purpose flour

1/2 tb Salt

1 1/2 tb Sugar

1/4 c Vegetable oil

2 lg Eggs

Cornmeal to dust cookie

2 qt Water

1 Egg white (optional)

Directions:

Put potato into boiling water and boil for 15 minutes.

Discard potato and let water cool to about 110 degrees

F.

Transfer 1/3 cup of the potato water to a small bowl.

Sprinkle yeast over top of water and stir to combine.

Set aside for 3 minutes.

Sift flour, salt, and 1/2 tablespoon of the sugar

together into a large bowl. Add yeast mixture. Stir

in another 2/3 cup of the potato water and the oil.

Add eggs one at a time and stir briskly until a dough

ball is formed.

Turn dough out onto a floured surface and knead for

about ten minutes until dough ball is firm, adding a

little extra flour if needed. Place in a greased bowl,

turning the dough so all sides are greased. Cover the

bowl with a clean towel and set aside in a warm place

for about 1 hour until dough has risen to double its

original size. Punch the risen dough down to flatten

and remove from bowl.

Cut dough into 18 equal pieces and shape each piece

into a 6- to 7-inch-long, 3/4-inch-thick rope. Bring

the ends of one rope together and pinch closed. (A

little water on the ends will help secure them.)

Repeat until 18 rings are formed. Cover all rings

with the towel and let rise for 20 minutes.

Preheat oven to 450 degrees F. Lightly grease a

cookie sheet and dust with cornmeal.

Bring the 2 quarts water to a boil. Add the remaining

tablespoon of sugar to the boiling water. Drop the

bagels into the water one at a time, cooking each for

3 minutes, turning once. As each bagel is removed

from the water, place it on the cookie sheet. If

desired, paint the tops of the bagels with 1 egg white

that has been beaten with 1 teaspoon water. Bake for

12 to 15 minutes, until golden brown.
